Phifer Pavitt Opens LATE NIGHT and RESERVE to the Public: Wine-Barrel Bourbon From a Two-Person Shop

Phifer Pavitt β€” the Napa/Middletown, California label that brings a wine-country sensibility to Kentucky barrels β€” has opened its wine-barrel-finished bourbons to the general public for the first time. LATE NIGHT and RESERVE pour ahead of this month's Kentucky Bourbon Festival (September 10–13).

This is an up-and-coming story in its purest form: a two-person operation β€” founder Shane Pavitt still works as an electrician β€” built on a shoestring by Shane and Jenelle Pavitt, sourcing Kentucky barrels and finishing them in Napa Cabernet casks. Wine meets bourbon, literally, in the same bottle.

The track record reads like a cult label: prior releases "Date Night: A Unique Fusion" β€” a Cabernet-finished bourbon β€” and "Getaway Car" sold out. Now the doors open to the general public for the first time, and the timing is deliberate: the Kentucky Bourbon Festival crowd is already thinking about what to pour.

FreedomWire likes this one because it is the industry's long tail β€” not another conglomerate SKU, but a husband-and-wife label proving that two people with a barrel deal and a finishing idea can still get real bottles out the door. If you are heading to the Festival, LATE NIGHT and RESERVE are the kind of small-brand pours that make the trip worth it.
